Chicken Curry - Crockpot

I've made this one several times, as it's so quick and easy!

Ingredients:
  • 1 pound chicken breasts
  • 1 can coconut milk (shake it well before you open it)
  • 1T Thai green curry paste
  • 1 onion, chopped
  • 3 or 4 carrots, scrubbed and cut into 1" chunks
  • Some green beans, cut into 1" lengths

Directions:
  1. Put the chicken breasts, onion, and carrots in the crock pot.
  2. Combine the coconut milk and curry paste in a bowl and mix well. Pour this mixture over the chicken.
  3. Cover and cook on low for 6-8 hours. Half an hour before the end, add the green beans.
  4. Eat.
Alternatively, don't put the onions and carrots in the pot at the beginning. Instead, slice the carrots thinly and when the chicken is nearly done, saute the carrots and onion in coconut oil along with green beans, garlic, and lime juice. Dump the cooked chicken over the vegetable saute.

You could also serve this over basmati rice, though that's not Paleo.

  1. I like the idea of putting the carrots in at the end...and yes, I'd want to avoid the rice...to at least try this for a while. I know that one problem I'd have with paleo is staying away from nuts - not that they're not allowed, but that I have a hard time limiting them - especially when watching Downton Abbey!

  2. When watching TV, if I need a snack, I often will eat a banana with almond butter or maybe just a grapefruit (peeled and eaten like an orange).

  3. I've been cooking things I think other people will like, so I'm feeling tired and sluggish. Back to eating better. Anyway, so I hopped online this morning to relook at your recipes. I'm going to use probably three of them this week. In reference to this one, I wonder if it would wreck it to use my hot curry powder, rather than the green Thai curry paste. I have the hot curry powder and love it. So I'll try that and see what happens. Also, with your breakfast, I think I'll use black beans instead of green beans. I'm not doing paleo, just want to go back to eating grainless and getting more soluble fiber back in my diet. Hope you're having a good weekend.
