Here's the marinade I used (found here).
Ingredients:
- 1/4 cup cider vinegar
- 3 tablespoons spicy brown mustard
- 3 cloves garlic, minced
- 1 lime , juiced
- 1/2 lemon , juiced
- 1/2 cup brown sugar
- 1 1/2 teaspoons salt
- 6 tablespoons olive oil
- Ground black pepper
- 4 boneless, skinless chicken breasts
Instructions:
- Mix all of the ingredients (except the chicken) in a medium-sized bowl.
- Between two pieces of parchment paper or saran wrap, pound the chicken breasts to an even thickness.
- Put the chicken in the bowl with the marinade. Let marinade over-night, if possible.
- Grill! Discard the marinade.
I use spicy brown mustard a lot. This sounds good with the lemon and spicy brown mustard!
