Marinated Grilled Chicken

Last Saturday night, I had the forethought to marinade some chicken breasts before I went to bed. The next day, Gus grilled the chicken, and it was amazing!

Here's the marinade I used (found here).

Ingredients: 
  • 1/4 cup cider vinegar
  • 3 tablespoons spicy brown mustard
  • 3 cloves garlic, minced
  • 1 lime , juiced
  • 1/2 lemon , juiced
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons salt
  • 6 tablespoons olive oil
  • Ground black pepper
  • 4 boneless, skinless chicken breasts


Instructions: 
  1. Mix all of the ingredients (except the chicken) in a medium-sized bowl.
  2. Between two pieces of parchment paper or saran wrap, pound the chicken breasts to an even thickness.
  3. Put the chicken in the bowl with the marinade. Let marinade over-night, if possible.
  4. Grill! Discard the marinade. 
I served this with sweet potato, snap peas, and grilled pineapple (dusted with cinnamon before hitting the grill).

  1. I use spicy brown mustard a lot. This sounds good with the lemon and spicy brown mustard!
