Side Dish: Kale with Bacon!

Tonight for dinner we grilled some Sweet Italian Turkey Sausages. While those were cooking, I was scouring the internet to find a side dish that I could make using the odd assortment of ingredients in the fridge. I ended up modifying one I found on Nom Nom Paleo.

Ingredients: 
  • 6 slices bacon (nitrate/nitrite free)
  • 2 large shallots, sliced thinly
  • Kale, lots of it, washed and chopped (without the "spine")
  • Ground pepper

Instructions: 
  1. Cook the bacon. Set aside. Crumble when cool. 
  2. Saute the shallots in the bacon grease.
  3. Dump in the chopped kale. Saute until it's sufficiently wilted.
  4. Add the crumbled bacon.
  5. Sprinkle a little pepper on it. 
  6. Eat.
This was amazingly good! Well, maybe it's not so amazing, considering it was cooked in bacon grease. :)
