Ingredients:
- 6 slices bacon (nitrate/nitrite free)
- 2 large shallots, sliced thinly
- Kale, lots of it, washed and chopped (without the "spine")
- Ground pepper
Instructions:
- Cook the bacon. Set aside. Crumble when cool.
- Saute the shallots in the bacon grease.
- Dump in the chopped kale. Saute until it's sufficiently wilted.
- Add the crumbled bacon.
- Sprinkle a little pepper on it.
- Eat.
